Lemon Champagne Sorbet

Makes 1 quart

Ingredients:

2 cups of water
¾ cup of sugar
4 cups of Brut Champagne
2 tablespoons of Lemon Zest
Juice from 3 lemons

Directions:

  • Put lemon zest and water in a non-reactive sauce pan.
  • Heat the water to a simmer.
  • Completely dissolve the sugar in the water.
  • Cool the mixture to room temperature.
  • Put the Champagne and lemon juice in the mixture.
  • Chill for 20 minutes.
  • Follow the instructions on how to chill sorbet in an ice cream maker.
